Beef and Sun-Dried Tomato Roll-ups

A yummy appetizer that is quick to go on the buffet table. The beef should be thinly sliced, but not shaved. Also, don't be afraid to experiment with different cream cheese combinations. Show more

Directions

  1. Spread each slice of roast beef with cream cheese.
  2. Sprinkle with chopped sundried tomatoes.
  3. Roll up each slice tightly.
  4. Refrigerate, covered, for at least an hour or until firm.
  5. To serve, cut each roll into 4 pieces.
  6. Secure each with a cocktail toothpick.
  7. NOTE: Cream cheese with chives may be substituted.
  8. Also, these rollups are not served on their sides like pinwheels.
  9. The cut sides are on each end, not up and down.
  10. They may be secured with sprigs of fresh rosemary, instead of the toothpick.
