Beans and Sausage

I needed more recipes with beans to up fiber in my diet.  I used uncured, mesquite smoke (flavored) turkey sausage to make this extra heart healthy.  Definitely a comfort food and so simple to make! Show more

Directions

  1. Cut sausage into bite sized pieces.  Fry in olive oil on medium heat until both sides are nicely browned.
  2. Add in beans, chicken broth, garlic, spices, pepper, and tomatoes.  Bring to a slow simmer and simmer for about 10-15 minutes.
  3. Add in spinach and cook just until it's wilted.
  4. Serve.
