Bean and Veggie Salad

Ingredients
- 2 (15 ounce) cans black beans, rinsed and drained
- 1 (15 1/4ounce) can corn, drained
- 2 avocados, peeled and diced
- 1 cucumber, diced
- 1 green pepper, diced
- 1 small red onion, diced
- 3 tomatoes, diced
- 1 stalk celery, thinly sliced
- 2 tablespoons cilantro, chopped
- 1 tablespoon extra virgin olive oil
- 5 garlic cloves, minced
- 2 limes, juiced
- salt
Directions
- Stir together all of the ingredients including the lime juice. Mix well and let it marinate for an hour or so. Serve with tortilla chips or eat alone. Refrigerate.
