Bean and Orange Salad

Ingredients
- 1 small red onion, thinly sliced
- 1 (15 ounce) can black beans or 1 (15 ounce) can kidney beans, drained and rinsed
- 1 (11 ounce) can mandarin orange sections, drained
- 1⁄4 cup fresh cilantro leaves
- 1⁄3 cup fresh lime juice
- salt and pepper
Directions
- Soak onion in ice water 10 minutes. Drain and pat dry with paper towels.
- Place in a medium bowl and add remaining ingredients. Toss to mix.
