BBQ Sloppy Joe Bake

I am copying this from Womans World..I am just using ground turkey in place of the ground beef that was in their recipe to see if I can lower the saturated fat. Show more

Ingredients

  • 2  cups  sliced bell peppers (from frozen pepper stir fry mix)
  • 1  lb ground turkey
  • 1 (15 1/2ounce) can  sloppy joe sandwich sauce
  • 14 cup barbecue sauce
  • 1 (8 1/2ounce) package  corn muffin mix (Jiffy)
  • 1  egg
  • 13 cup water

Directions

  1. preheat oven to 400,coat 1/1/2 quart baking dish and large non stick skillet with cooking spray. Heat skillet over medium heat -- add 1 1/2 cups Pepper mix. cook until softened -- 3 to 4 minutes.Add Turkey stirring until brown/ 5 minutes. Drain excess fat. Stir the sloppy Joe and barbecue sauce into turkey mixture, cook until thickened,3 minutes.
  2. Transfer to baking dish. In bowl whisk muffin mix, egg, 1/3 cup water until combined. Pour over turkey mixture. Top with remaining 1/2 cup pepper mix.Bake until cornbread is golden.
