BBQ Pineapple Chicken Strips

Ingredients

  • 2  quarts  pineapple juice, sweeten
  • 1  fresh pineapple, chucks
  • 13 cup  oil
  • 1  tablespoon salt
  • 5  lbs  boneless chicken thighs, cut into 1 inch chucks
  • 24  bamboo skewers, soak in water for 30 minutes
  •  shredded coconut

Directions

  1. Lightly salt the chicken piece and marinate the chicken in pineapple juice mixture overnight. Skewer the marinate chicken and pineapple chuck before placing onto the bbq gill. Plate the pineapple chicken skewer and top with shredded coconut.
