Bayrischer Kartoffelsalat (Barvarian Potato Salad)

Ingredients

  • 4  cups potatoes (Potatoes should be peeled and sliced 1/4-inch thick.)
  • 2  cups chicken broth (either home made or commercial)
  • 12 teaspoon salt
  • 14 cup  vegetable oil
  • 13 cup onion, Chopped
  • 12 teaspoon sugar
  • 2  tablespoons lemon juice
  •  pepper

Directions

  1. Boil potatoes in broth with 1/4 t salt for 5 to 8 minutes, until tender.
  2. Drain.
  3. Toss warm potatoes with vegetable oil and onions.
  4. Dissolve remaining 1/4 t salt and the sugar in lemon juice.
  5. Pour over potatoes.
  6. Marinate salad 1 to 2 hours before serving.
  7. Serve at room temperature.
