Bayou Chicken & Sausage Jambalaya

I wanted to make a Jambalaya but all I had was the 10 minute Boil-in-Bag Success Rice and I was worried about it getting mushy. Low and behold, I found a recipe on their website. Here it is! (This is the healthy version. I used 2 medium chicken breasts in place of the cubed chicken strips, kielbasa instead of smoked turkey sausage, brown rice instead of white rice and we used regular salted tomato products and Creole seasoning and it turned out fine) Show more

Directions

  1. Prepare rice according to package directions.
  2. Heat oil in a large skillet. Sauté onions, bell pepper and celery for 5 minutes.
  3. Add chicken and sausage to skillet and sauté an additional 3 minutes. (If using raw chicken, make sure you cook it in a separate pan BEFORE you add it to the vegetables).
  4. Stir in tomato sauce, diced tomatoes, Creole seasoning, and Worcestershire sauce and heat through.
  5. Add cooked rice to skillet, stir to mix.
