Basil, Garlic Plus Mashed Potatoes

Ingredients
- 3 1⁄2 lbs potatoes, peeled,cut into 1 inch cubes
- 1 medium onion, finely chopped
- 3 stalks celery, cut in half
- 12 cloves garlic, peeled & chopped
- 1⁄2 teaspoon salt
- 3⁄4 cup 2% fat cottage cheese, drained
- 1⁄2 cup buttermilk
- 3 tablespoons fresh basil, finely chopped
Directions
- Cover the potatoes with water add the celery, onion, garlic& salt.
- Cook until tender (apprx 15-20 minutes).
- Remove celery& discard.
- Drain well through a sieve so you don't lose the onion& garlic.
- Mash the potatoes.
- Combine Cottage cheese, buttermilk& Basil, add to potatoes, mix until smooth.
- Reheat over very low heat.
