Basil, Balsamic Vinegar and Pine Nut Dressing

Ingredients
- 1 ounce pine nuts, lightly toasted
- 1 sprig fresh basil, leaves picked
- 2 tablespoons balsamic vinegar
- 5 tablespoons extra virgin olive oil
- salt & freshly ground black pepper
Directions
- Place all the ingredients in a blender and whizz to paste, adding enough oil to make a dressing consistency.
