Basic Sponge

Ingredients
- 1 cup bread flour
- 2 teaspoons sugar
- 2 1⁄2 teaspoons dry yeast
- 3⁄4 cup very warm water (120 to 130)
Directions
- Lightly spoon flour into a dry measuring cup; level with a knife.
- Place all the ingredients in a food processor, and process for 1 minute or until well-blended. Spoon mixture into a medium bowl; cover and chill sponge for 2 to 24 hours.
