Barley Pilaf

Yields: 3 cups
Ingredients
- 1 cup quick-cooking barley
- 2 tablespoons butter
- 2 cups chicken broth
Directions
- Melt butter in a saucepan.
- Add barley and stir until coated with butter.
- Add chicken broth and bring to a boil. Cover. Turn heat to simmer and cook 10-12 minutes or until barley is tender and liquid is absorbed. Remove from heat and let stand 5 minutes.
