Barley Corn Casserole

Ingredients
- 1 cup chopped onion
- 2⁄3 cup chopped carrot
- 3 chopped garlic cloves
- 1 tablespoon olive oil
- 1 cup barley
- 3 cups fat free chicken broth
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 2 cups frozen corn, defrosted
- 1⁄2 cup fresh parsley
Directions
- Sauté onion, carrot and garlic in olive oil until tender.
- Place in 2 qt prepared baking dish.
- Add barely, chicken broth, salt and pepper.
- Cover and cook at 350 for 60 minutes.
- Uncover and stir in corn and parsley.
- Cover and cook for 10-15 until corn is heated through.
