Barbecued Chicken Hash-without the BBQ

  1. Preheat oven to 375f degrees.
  2. Heat oil in a large cast iron frypan or heavy frypan over high heat.
  3. Add onion, celery, bell pepper, and carrot, saute 1 1/2 minutes.
  4. Add chicken and next 7 ingredients (chicken through salt), bring to boil.
  5. Reduce heat, and simmer for 2 minutes.
  6. Bake at 375f degrees for 10 minutes.
  7. Sprinkle with cheese and jalapeno, bake an additional 5 minutes or until cheese melts.
