Barbecue Sauce

Ingredients
- 1 teaspoon cumin seed
- 5 cloves
- 2 tablespoons fennel seeds, crushed
- 1⁄2 teaspoon salt
- 1 teaspoon ground black pepper
- 1⁄4 cup fresh thyme
- 1⁄4 cup fresh rosemary
- 1 orange, zested and juiced
- 8 garlic cloves
- 4 teaspoons sweet smoked paprika
- 6 tablespoons balsamic vinegar
- 1⁄2 cup tomato ketchup
- 8 tablespoons olive oil
- 5 bay leaves
Directions
- Grind the cumin seeds and fennel seeds and cloves in a bowl with the salt and pepper.
- Chop the rosemary and thyme leaves, orange zest and garlic together finely.
- Put into a bowl with the spices.
- At the balsamic vinegar, ketchup and olive oil.
- Mix together.
- Rub the sauce over your meat. Let the meat rest for at least 1 hour. Better to put the marinade ont the meat the night before.
