Banana, Zucchini or Apple Bread

Yields: 2 loafs
Ingredients
- 3 eggs
- 1 cup brown sugar (packed)
- 1 cup granulated sugar
- 1 cup vegetable oil or 1 cup canola oil
- 2 cups bananas, mashed (or zucchini or apples)
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup of chopped nuts
- 3 cups all-purpose flour
Glaze
- 1 cup sugar
- 1⁄2 cup water
- 1⁄2 teaspoon vanilla
Directions
- Heat over to 325 degrees. Beat eggs until frothy, stir in sugar, oil, bananas, and vanilla. Combine dry ingredients, stir into mixture until well mixed, add nuts, stir well and pour into two well greased loaf pans. Bake 1 hour. Set pans on cake rack and glaze.
- Glaze directions: Bring to a good boil then add vanilla.
