Banana Spice Coffeecake

I found this in "Favorite Brand Names: Gifts From the Kitchen" cookbook and I am posting for safekeeping. I will update and post any tweaks once I make it. Show more

Yields: 1 10 inch round cake

  1. In food processor or blender, puree bananas (you need 1 cup of puree).
  2. In a small bowl, combine brown sugar, cinnamon and nutmeg. Cut in 1/4 c margarine until mixture resembles coarse crumbs. Stir in walnuts and set aside.
  3. In a small bowl, combine flours, baking powder, baking soda and salt.
  4. In a large bowl, beat remaining 1/4 cup margarine and granulated sugar until light and fluffy. Beat in eggs and vanilla.
  5. Add flour mixture to egg mixture alternately with bananas, ending with flour mixture and beating well after each addition. Stir in raisins.
  6. Spread half the batter in greased and floured 10" tube pan. Sprinkle with half the brown sugar mixture. Repeat layers.
  7. Bake in preheated 350 degree oven for 45-50 minutes or until wooden pick inserted in center of cake comes out clean. Let cool in pan on wire rack 10 minutes.
  8. Loosen edge; remove from pan. Cool completely on wire rack.
