Banana Pancakes - Grain Free, Milk-Free

Only 3 ingredients. Be sure to use VERY ripe bananas or it may be a tad bitter. Texture is a little different than your typical pancake, but if avoiding grains and simplicity is important to you, these are a nice alternative. Show more

Yields: 6 pancakes

Ingredients

  • 1  banana (extremely ripe and mashed with a fork)
  • 3  eggs
  • 2  tablespoons  nut butter (i.e. peanut or almond butter)

Directions

  1. Beat 3 eggs, add mashed banana and nut butter and mix together until fairly smooth. Batter will be pretty thin.
  2. Pour about 1/4 cup for each pancake onto a hot skillet or pan (grease first unless non-stick or cast iron), and flip when the outer edge begins to set. Cook on each side until golden. These cook fast so keep an eye on them!
