Banana Oatmeal Breakfast Cookies

My kids love these cookies, and they are better for you than a lot of traditional breakfast foods out there. They are almost like bite-sized banana bread, as opposed to cookies. I like to buy overripe bananas at the store on sale, peel, and freeze them. They are easy to mash once defrosted. Show more

Directions

  1. Sift together flour, spices, salt, baking powder, baking soda, and sugars.
  2. Add butter (make sure it is soft), applesauce, mashed bananas, eggs, and vanilla.
  3. Beat until smooth, about one minute.
  4. Fold in oats.
  5. Drop by teaspoons on a greased cookie sheet. Bake at 375 degrees for 10-12 minutes.
