Banana Nut Bread

Ingredients
- 1 cup butter
- 2 cups white sugar
- 2 cups bananas (overripe and mashed)
- 4 eggs
- 1 cup walnuts, chopped (optional)
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 cups flour (all-purpose)
Directions
- Preheat oven to 350. Grease and flour loaf pans (5 mini loaf pans or 2 9x5 loaf pans).
- In large bowl melt butter.
- Stir in sugar until smooth.
- Stir in eggs, bananas and walnuts until well blended.
- Stir in baking soda, salt and flour.
- Bake at 350 for 60-70 minutes or until knife inserted into crown of loaf comes out clean.
- Let stand for 5 minutes and turn out on cooling rack.
- Cool completely and wrap in aluminum foil to keep in moisture.
