Banana Loaf

Ingredients
- 1 cup mashed ripe banana
- 1 cup granulated sugar
- 1⁄4 cup vegetable oil
- 1⁄2 cup sour cream
- 2 eggs, beaten
- 1 1⁄2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
Directions
- In larg mixing bowl, combine bananas, sugar, oil, sour cream and eggs; mix thoroughly. In separate bowl, mix together flour, baking powder, soda and salt; add to banana mixture, mixing just until combined.
- Pour into greased 9 x 5-inch (2 L) loaf pan. Bake in 325 F (160 C) oven for 1 to 1-1/4 hours or until tester inserted in centre comes out clean. Cool in pan 5 minutes before turning out onto rack to cool completely. Slice and serve; butter if desired. Makes 1 loaf.
