  1. Mash bananas in a small bowl and add lemon juice.
  2. Cream shortening, butter, sugar, and eggs; add bananas, buttermilk; add vanilla.
  3. Sift flour, baking soda and salt together in separate bowl then add to cream mixture.
  4. Fold in optional nuts.
  5. Chill dough for one hour.
  6. Using an ice cream scoop, scoop 12 cookies onto a parchment lined baking sheet.
  7. Bake at 375 for 10-11 minutes.
  8. Cool completely on a cookie rack before frosting. Refrigerate frosted cookies.
  9. Frost with Cream Cheese Frosting:
  10. 1 lb. powdered sugar.
  11. 8 oz. cream cheese (softened).
  12. 1/2 cup butter (softened).
  13. 1 teaspoons vanilla.
