Banana & Honey Muffins

Ingredients
- 10 ounces wholemeal self-rising flour
- 8 ounces mashed bananas
- 2 ounces soft brown sugar
- 1⁄2 tablespoon lemon peel
- 60 ml sunflower oil
- 1 teaspoon vanilla essence
- 2 tablespoons clear honey
- 8 fluid ounces milk
- 1⁄2 teaspoon baking powder
Directions
- preheat oven to gas mark 7.
- combine all ingredients together, beating well.
- Divide into 12 muffin cases or deep bun cases and bake for 20 minutes.
