Banana Fruit Loaf

I found this gorgeous recipe in Ruth Isabel Ross' "Irish Baking Book", which I had originally given to my mum as a birthday present when spending a year abroad in Ireland. It is easy to make and just tastes so fruity. =) Show more

Directions

  1. Pre heat the oven to 180°C and line a small baking tin with baking paper.
  2. Mix the flour, the baking powder, the sugar and the raisins/sultanas in a bowl.
  3. Add the egg and the well mashed bananas. Blend toghether (The dough should be soft and creamy.).
  4. Fill the dough into your baking tin and bake for approximately 45 minutes (or until inserted toothpick comes out clean).
