Banana Corn Muffins

Ingredients
- 1 mashed banana
- 1⁄2 cup milk (2% or skim)
- 1 (8 1/2ounce) package corn muffin mix (such as Jiffy)
- 1⁄2 teaspoon vanilla extract
- cooking spray
Optional
- 1⁄4 cup semi-sweet chocolate chips
Directions
- Preheat oven to 350°.
- Combine banana, milk, mix, vanilla extract, and chocolate chips (if desired) in a medium bowl. Stir just until moist.
- Spoon batter evenly into 6 muffin cups coated with cooking spray ). Bake at 350° for 22 minutes or until a wooden pick inserted in center comes out clean.
- Cool in pan 10 minutes.
