Banana Cake with Coconut Icing

Ingredients
Cake
- 1⁄2 cup butter
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 3⁄4 teaspoon salt
- 1 1⁄2 cups white sugar
- 1 cup ripe banana (mashed)
- 1⁄2 cup sour milk
- 2 eggs
Icing
- 3⁄4 cup brown sugar
- 1⁄2 cup butter
- 2 tablespoons cream or 2 tablespoons milk
- 1 cup coconut
Directions
- Whip butter in bowl.
- Sift in dry ingredients.
- Add milk, bananas, eggs and mix.
- Bake at 350F for 25-35 minutes Combine ingredients for icing in a heavy saucepan, and cook until well blended.
- Spread over cake while still warm.
- (Tip- to make sour milk, add a splash of vinegar and stir).
