Banana Butter

This is so good, but next time I will cut the sugar, it was a little sweeter than I liked.

Yields: 4 half pint jars

  1. Measure first 5 ingredients into large saucepan.
  2. Heat and stir constantly as you bring to a rolling boil.
  3. Boil one minute.
  4. Remove from heat.
  5. Stir in pectin.
  6. Stir and skim for 5 mintues so fruit won't float.
  7. Pour into hot sterilized jars to within 1/4 inch of top.
  8. Seal.
  9. Makes 4 half pints.
