Banana Bread Oatmeal

I love eating oatmeal in the morning - it's cheap, filling, and tasty. However, I got a little bit sick of the usual raisins and apples variety. I came up with this oatmeal after reading about "overnight Oatmeal" in the "Student's Vegetarian Cookbook", and it tastes just like banana bread. Show more

Ingredients

  • 13 cup quick oats
  • 12 cup soymilk (vanilla soy milk is the best!) or 12 cup  dairy milk (vanilla soy milk is the best!)
  • 12 medium banana, sliced
  • 1  teaspoon  packed brown sugar
  • 1  teaspoon  chopped walnuts (optional)

Directions

  1. Combine all ingredients and stir well, mashing up banana if desired.
  2. Chill overnight or heat in microwave for about 1 minute.
  3. Stir well.
  4. If chilling overnight, eat cold.
  5. Otherwise, eat immediately!
