Banana Bread

Recipe for Banana bread from a coworker. I can't cook but even I don't screw this one up. I love it :-) Show more

Yields: 1 loaf

Ingredients

  • 13 cup shortening (Blue Bonnet Margarine)
  • 23 cup sugar
  • 2  eggs, slightly beaten
  • 1 34 cups flour
  • 2 34 teaspoons baking powder
  • 12 teaspoon salt
  • 1  cup  mashed banana (2 or 3)

Directions

  1. Beat shortening until creamy.
  2. Add sugar and eggs until pale lemon in color.
  3. Add dry ingredients alternatively with bananas.
  4. Blend them roughly.
  5. Grease bottom only of a leaf pan.
  6. Turn batter into pan.
  7. Bake at 350 degrees for 60 to 70 minutes or until toothpick comes out clean and dry.
  8. Let bread cool in pan 20 to 30 minutes.
  9. Turn on rack.
  10. Enjoy!
