Banana Berry Toasted Almond Muffins

  1. Heat oven to 350°.
  2. Sift the flour, baking powder, baking soda and salt.
  3. Cream the butter with the sugar until fluffy.
  4. Beat in the eggs.
  5. Puree the bananas, sour cream and vanilla extract.
  6. Alternately add dry ingredients in 3 additions and banana mixture in 2 additions to egg mixture. Beat just enough to incorporate.
  7. Add the raspberries and almonds.
  8. Spoon into greased muffin cups.
  9. Bake about 25 minutes, until puffy, brown and springy.
