Banana and Passionfruit Butter

This makes an excellent cake filling, or spread for scones. For ZWT8.

Directions

  1. Mash the bananas.
  2. Halve the passionfruit and scoop out the pulp.
  3. Place all the ingredients into the top of a double broiler saucepan and cook over a medium heat, stirring or whisking until thickened.
  4. Bottle in sterilized jars and seal.
