Banana and Custard Sundaes

Adapted from BBC Easy Cook magazine Issue 2 Autumn 2004. Original recipe calls for half a bottle of butterscotch or toffee ice-cream sauce, but as I am diabetic this is out of the question! I've written a note in the directions where to put the sauce if you would like to use it. You don't have to use vanilla ice - cream - you could use toffee or one with nuts, I chose vanilla because it's lower in sugar! Show more

Serves: 4

Yields: 4 sundaes

Directions

  1. Mash 2 of the bananas in a bowl and stir in the custard.
  2. Spoon into the bases of four glasses.
  3. Drop the scoops of ice cream on to the custard then slice in the remaining banana.
  4. *Generously add sauce*.
  5. Scatter with nuts if you are using them, and serve.
