Balsamic Roast Beef

Ingredients
- 1 tablespoon olive oil
- 3 lbs top round roast
- 4 teaspoons minced garlic
- 1 teaspoon kosher salt
- 1 teaspoon pepper
- 14 ounces organic beef broth
- 1 cup red wine
- 1⁄4 cup balsamic vinegar
- 1 cup chopped onion
Directions
- Heat oil in a skillet over medium-high heat; rub roast with
- garlic, salt and pepper.
- Cook 2 minutes per side or until browned.
- Transfer to a slow cooker.
- Stir in broth, wine, vinegar and onion.
- Cover and cook on Low 6 to 8 hours or until tender.
