Balsamic Beef Roast (Slow Cooker)

Easy weeknight dinner. Serve with Garlic Mashed Potatoes, Broccoli or Green Salad. Enjoy!

Ingredients

  • 3  lbs beef roast, boneless
  •  salt and pepper
  • 2  tablespoons  herbes de provence, dried
  • 4  garlic cloves, smashed
  • 1  cup  balsamic vinegar

Directions

  1. Spray large skillet with cooking spray; heat over medium high heat. Cook beef in skillet, turning beef about 5 minutes, or until all sides are brown. Sprinkle with salt, black pepper and herbs de provence.
  2. Place smashed garlic in slow cooker; place beef on top of garlic. Pour vinegar over beef. Cover and cook on low heat 6-8 hours, or until beef is tender.
