Baked White Chocolate Cheesecake

Ingredients
- 100 g butter, melted
- 200 g shortbread cookies, crusehd
- 600 ml cream
- 250 g cream cheese, softened to room temp
- 150 g white chocolate, melted
- 4 eggs
- 2 teaspoons vanilla
Directions
- Pre-heat your oven to 140oC.
- Combine the cookie crumbs and butter, press into a 24cm spring form tin & refrigerate until firm.
- Beat the cream cheese until soft and creamy. Gradually beat in the cream, it will go thick and creamy (beat for 3-5 minutes).
- Whisk in the eggs and vanilla.
- Finally fold through the melted chocolate.
- Pour into the base (I pour over the back of a large spoon) and bake in the pre-heated oven for 75 minutes. The center should resemble set jelly.
- Leaven in the oven with the door open until at room temp (could take upto 2 hours).
- Refrigerate until serving time. Can be made upto 2 days ahead of time.
