Baked White Chocolate Cheesecake

From the back of a "Bulla" cream carton.

  1. Pre-heat your oven to 140oC.
  2. Combine the cookie crumbs and butter, press into a 24cm spring form tin & refrigerate until firm.
  3. Beat the cream cheese until soft and creamy. Gradually beat in the cream, it will go thick and creamy (beat for 3-5 minutes).
  4. Whisk in the eggs and vanilla.
  5. Finally fold through the melted chocolate.
  6. Pour into the base (I pour over the back of a large spoon) and bake in the pre-heated oven for 75 minutes. The center should resemble set jelly.
  7. Leaven in the oven with the door open until at room temp (could take upto 2 hours).
  8. Refrigerate until serving time. Can be made upto 2 days ahead of time.
