Baked Rice Custard

Serves: 4-6
Ingredients
- 1 cup uncooked rice
- 5 eggs
- 1 teaspoon vanilla essence
- 1 cup sugar
- 1 liter milk
Directions
- Cook rice in plenty of boiling water.
- Strain rice under the tap using cold water to get starch out.
- Mix sugar, milk, egg and vanilla.
- Add rice and stir well.
- Sprinkle with nutmeg.
- Bake in moderately hot oven until set. (About 2 hours).
