Baked Pumpkin Pudding

Ingredients
- 1 1⁄2-2 cups canned pumpkin
- 2 1⁄2 cups buttermilk
- 3⁄4 cup white sugar
- 1⁄2 cup brown sugar
- 1⁄4 cup butter, melted and cooled
- 3 eggs, beaten
- 1 1⁄2 cups flour
- 1 1⁄2 teaspoons baking soda
- 1 1⁄2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1⁄2 teaspoon nutmeg
- 1⁄2 teaspoon ginger
- 1⁄4 teaspoon ground cloves
Directions
- Preheat oven to 425 F and grease a 9x13 pan, or several smaller pans.
- Combine pumpkin and buttermilk.
- Beat until smooth.
- Stir in sugars and butter, then beat in eggs.
- Combine and sift all dry ingredients.
- Add to pumpkin batter a little at a time, mixing after each addition.
- Pour batter into prepared pan and place in a hot water bath in the oven.
- Bake for 15 minutes.
- Reduce heat to 350 F and bake for another 25-30 minutes, or until a toothpick inserted in center comes out clean.
