Baked Potato Soup

Yields: 4 cups
Ingredients
- 4 tablespoons butter
- 1 medium onion, chopped
- 2 tablespoons flour
- 2 cups chicken broth
- 1 1⁄2 lbs potatoes, peeled and diced to 1/2 inch
- 1 teaspoon salt
- 1⁄2 teaspoon pepper
- 2 cups heavy cream or 2 cups milk
- 1⁄2 cup cheddar cheese, shredded
- 3 ounces bacon, crumbled
- 1⁄2 cup sour cream

- 1 ounce bacon, crumbled
Directions
- Melt butter on medium heat in stock pot.
- Add onion and saute for 2 minutes.
- Sprinkle flour over the onions and cook 3-5 minutes, stirring often.
- Gradually add chicken broth.
- Add potatoes, salt, and pepper, bring to a boil, then simmer 20 minutes or until potatoes are tender.
- Stir in heavy cream, 3 oz. bacon pieces and 1/2 Cup of cheddar cheese then heat through.
- Garnish with cheese, sour cream and bacon.
