Baked Potato Soup

Warm and Hearty this soup is a wonderful start to a dinner or it can be a meal on it's own. This recipe can easily be doubled or tripled!!! Show more

  1. Melt butter on medium heat in stock pot.
  2. Add onion and saute for 2 minutes.
  3. Sprinkle flour over the onions and cook 3-5 minutes, stirring often.
  4. Gradually add chicken broth.
  5. Add potatoes, salt, and pepper, bring to a boil, then simmer 20 minutes or until potatoes are tender.
  6. Stir in heavy cream, 3 oz. bacon pieces and 1/2 Cup of cheddar cheese then heat through.
  7. Garnish with cheese, sour cream and bacon.
