Baked Pina Colada Oatmeal

Ingredients
- 2 cups old-fashioned oatmeal
- 1 1⁄2 teaspoons baking powder
- 1⁄4 teaspoon salt
- 1 1⁄4 cups low-fat milk
- 2 eggs (beaten)
- 1⁄2 cup crushed pineapple (with juice)
- 1⁄4 cup sugar
- 1⁄4 cup shredded coconut
Directions
- Combine oatmeal, baking powder, and salt.
- Mix in milk, eggs, pineapple, sugar, and coconut.
- Pour into greased casserole dish (can be refrigerated overnight prior to baking if desired).
- Bake at 325 for 40 minutes.
- Cut into bars and serve (can spoon vanilla yogurt on top if desired).
