Baked Pears With Goat Cheese and Raspberry Drizzle

Ingredients

  • 4  pears, firm-ripe, halved (Bartlett, Anjou, or Bosc)
  • 1  tablespoon lemon juice
  • 12 cup  orange juice
  • 2  tablespoons  sugar artificial sweetener
  • 14 cup  smuckers  raspberry jam (no sugar added)
  • 14 teaspoon ground black pepper
  • 2  ounces  goat cheese

Directions

  1. Remove pear cores with melon baller and sharp knife; brush with lemon juice.
  2. Place pears in a 12x9-inch baking dish, cut side up, in single layer.
  3. Combine orange juice and sweetener and pour over pears.
  4. Cover pears tightly and bake at 375F for 30-45 minutes or until tender.
  5. Transfer Pears to serving plate, reserving juices.
  6. In small saucepan,combine jam, reserved juices, and black pepper; bring to a boil and cook for 2-3 minutes, or until thickened.
  7. To serve pears, place 2 warm pear halves on individual plates, fill cavities with a little crumbles goat cheese and drizzle with warm raspberry sauce.
