Baked Italian Chicken Nuggets

Yields: 36-48 nuggets
Ingredients
- 4 -5 boneless skinless chicken breasts
- 2 -3 cups panko breadcrumbs
- 1 egg
- 1⁄2 cup 2% low-fat milk
- 1⁄2 cup grated parmesan cheese
- 2 tablespoons italian seasoning (you can add any type of herbs or spices you like in place of the Italian seasoning)
- 1 teaspoon kosher salt
- fresh ground black pepper
Directions
- Preheat oven to 350.
- Wash chicken breasts, pat dry. Cut into bite size chunks.
- In a small bowl or pasta dish, beat egg. Add milk to egg and stir to combine.
- On a large plate, add Panko crumbs, Parmesan cheese, Italian seasoning, salt, and pepper. Mix together. (you could also do this in a Ziploc bag).
- Add chicken nuggets to egg/milk mixture and coat thoroughly.
- Next, dredge nuggets in seasoned crumb mixture until covered.
- Place chicken nuggets on cookie sheet sprayed with non-stick cooking spray, leaving space between each nugget.
- Bake at 350 for about an hour or until done.
