Baked Herring

Ingredients

  • 4  herrings  fillets
  •  salt and pepper
  • 12 pint half-and-half, malt vinegar or 12 pint water
  • 1  tablespoon  pickling spices
  • 4  bay leaves
  • 2  small onions, sliced

Directions

  1. Clean herrings, cut off heads and tails.
  2. Scale and bone herrings, cut down middle to give you two fillets.
  3. Rollup the fillets from the tail end with the skin inside.
  4. Place close together in an ovenproof dish.
  5. Pour over the vinegar/water mixture.
  6. Sprinkle with pickling spice.
  7. Place onions and bay leaves on top.
  8. Cover with foil and bake slowly in a warm oven for 1½ hours.
  9. At Gas 2, 300ºF, 150ºC.
