Baked Fusilli With Bacon

This is a really easy recipe to make, stolen from my mother-in-law's recipe collection. The basic ingredients are bacon, cheese, onion, mushrooms, kernel corn and cream...you can add whatever other vegetables you wish. My kids love this! Show more

Serves: 6-8

Ingredients

  • 500  g  fusilli, prepared according to instructions on pack
  • 250  ml  cream
  • 250  g bacon, diced
  • 125  g mushrooms, sliced
  • 1  onion, sliced and diced
  • 250  ml  grated cheese, plus 125ml (any easy melting cheese)
  • 410  g kernel corn
  • 1  red bell pepper, sliced and diced
  •  garlic
  •  salt and pepper

Directions

  1. Preheat your oven to 180C / 350°F.
  2. Prepare fusilli according to the instructions on the pack.
  3. While the fusilli is cooking, heat some butter in a pan, add the diced onion until translucent. Then add the garlic and diced bacon and cook until the bacon is crispy.
  4. Add the mushrooms and about halfway through, add the diced bell pepper. Season to taste and take off the heat.
  5. In an ovenproof dish, mix together the cooked fusilli, the bacon / onion mixture, the can of corn and 250ml cheese, making sure to mix the cheese through thoroughly, then add the cream and mix through.
  6. Sprinkle the extra cheese over the top and bake in the preheated oven until the cheese is bubbly and brown on top.
  7. Serve with garlic rolls or a salad.
