Baked Fries With Lemon Parmesan Crust

Ingredients
- 3 yukon gold potatoes
- 2 tablespoons olive oil
- salt & pepper
- 1⁄4 cup grated parmesan cheese
- 1 lemon, zest of
Directions
- Preheat oven to 475 degrees Fahrenheit.
- Wash the potatoes with cold water and then cut into 3/8" thick fries (you can get creative with your cuts).
- Place fries in a pot and cover with cold water and 2 tablespoons of sea salt.
- Bring to a boil and simmer until just tender.
- Strain potatoes and place on a baking sheet lined with wax or parchment paper.
- Rub with olive oil and season with salt and pepper.
- Bake for 6 minutes then sprinkle with parmesan and lemon zest. Continue baking until golden brown.
