Baked Fries With Lemon Parmesan Crust

  1. Preheat oven to 475 degrees Fahrenheit.
  2. Wash the potatoes with cold water and then cut into 3/8" thick fries (you can get creative with your cuts).
  3. Place fries in a pot and cover with cold water and 2 tablespoons of sea salt.
  4. Bring to a boil and simmer until just tender.
  5. Strain potatoes and place on a baking sheet lined with wax or parchment paper.
  6. Rub with olive oil and season with salt and pepper.
  7. Bake for 6 minutes then sprinkle with parmesan and lemon zest. Continue baking until golden brown.
