Baked Beans With Pineapple and Plantain

Ingredients
- 1 onion, diced
- 1⁄2 large red bell pepper, diced
- 1 chipotle chile in adobo, seeded and diced
- 2 (28 ounce) cans baked beans
- 1 tablespoon mustard
- 1⁄2 cup packed brown sugar
- 1 black plantain, chopped
- 1⁄2 cup ketchup or 1⁄2 cup barbecue sauce
Directions
- Place all ingredients in a large casserole pan.
- Mix and bake in a preheated 350°F oven for 1-1/2 to 2 hours.
