Ingredients
- 8 slices bacon, cooked and crumbled
- 1 (24 ounce) can pork and beans
- 1 (15 ounce) can chili beans, undrained
- 3⁄4 cup finely chopped onion
- 1⁄2 cup packed brown sugar
- 1 (8 ounce) can enchilada sauce
- 1 tablespoon all-purpose flour
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1⁄8 teaspoon garlic powder
- 1 cup shredded monterey jack pepper cheese
Directions
- Combine all ingredients, except cheese; mix gently.
- Place in a greased 2 quart casserole.
- Bake, uncovered, at 475°F for 15 minutes.
- Reduce to 375°F for 30 minutes.
- Top with cheese for 15 minutes or more.
