Baked Apples With Philly Custard

Ingredients
- 4 apples (Pink lady or lady Williams)
- 250 ml dessert wine
- 1 cinnamon stick
- 1⁄4 cup brown sugar
- 250 g cream cheese spread
- 1⁄2 cup milk
- 2 tablespoons caster sugar
- 1 vanilla bean, split
- 1 tablespoon custard powder, blended with
- 1 tablespoon milk, to form a paste
- 1 teaspoon arrowroot
Directions
- CUT apples into three slices, place into a large shallow baking dish with the wine and cinnamon. Sprinkle over the brown sugar. Bake at 180°C for 20 minutes until tender. Spooning the syrup over the apples occasionally.
- WHISK together the cream cheese and milk. Heat in a saucepan. Add sugar, vanilla bean and custard powder paste. Bring to the boil, stirring until thickened.
- REMOVE apples from syrup, and keep warm. Pour syrup into a small saucepan. Combine arrowroot with some of the syrup to form a paste. Add to saucepan, and simmer until thickened. Serve apple slices with syrup and custard.
