Baked Ambrosia

Here's a bit of a twist to the usual 'ambrosia' recipe!

Serves: 8

Ingredients

  • 1 (15 1/4ounce) can  apricot halves
  • 1 (15 1/4ounce) can  peaches, sliced
  • 1 (15 1/4ounce) can purple plums
  • 1  orange, cut into thin slices
  • 12 cup  orange juice
  • 14 cup brown sugar, packed
  • 12 teaspoon lemon zest, minced
  • 2  tablespoons unsalted butter, melted
  • 12 cup coconut, flaked

Directions

  1. Preheat oven to 425 degrees F.
  2. Drain canned fruits well.
  3. Arrange all fruits in shallow 2-quart baking dish.
  4. Mix orange juice, sugar, zest & melted butter, then pour over fruit.
  5. Sprinkle coconut over top of fruit.
  6. Bake 15 minutes or until hot & coconut is toasted.
  7. Serve warm.
