Badger's Sofrito Concoction,soup and Sauce Base.

Ingredients
- 1⁄2 cup bacon (finely chopped)
- 1 1⁄2 cups onions (diced)
- 1 cup celery (diced)
- 1⁄4 cup fresh cilantro
- 2 tablespoons olive oil
- 5 garlic cloves
- 1 anaheim chili
- 1 tablespoon italian seasoning
- 1 cup mushroom (finely chopped)
- 1⁄4 cup dry white wine
Directions
- Start by Roasting the garlic,and Anaheim pepper(together) drizzled with Olive Oil,and covered, for 30 to 40 minutes.
- In a cast enamel,or ss pot,cook Bacon until crisp little bits.(keeping bacon fat).
- Add Onions,and saute until golden brown.
- Next add Celery,and cilantro,Italian seasoning.cook for 5 minute.
- Add wine,and reduce.
- Next,stir in fine chop Anaheim pepper(can leave seeds),and mash roasted garlic.
- Now add Mushrooms,and cook till mushrooms sweat off,mix well.
- Finish with Olive Oil.
- If using for meat sauces,ADD meat after wine reduction.
