Bacon English Muffins

This is a recipe my mom used to make for us kids on nights that we were "starving" and she had no time. Hope you enjoy as much as we did. Show more

Yields: 12 Muffin rounds

  1. Line cookie sheet with tinfoil and place cake cooling rack in center. Cut bacon slices in half. Cook bacon to just under fully cooked, place on paper towels to drain excess grease. Toast english muffins in toaster. Place on rack, top with slice of tomato, cheese and 2 half slices of bacon. Broil in oven until bacon is fully cooked. Careful not to burn the cheese.
